Mechanically, it is in great shape.  It starts right up and runs excellent - I wouldn’t hesitate to jump on it and go anywhere.

The only issues are cosmetic.  It could use a new seat cover (less than $50 on E-bay) and some touch up paint.

This model of bike was used extensively in Europe as a courier bike because of its mechanical robustness, where they were routinely driven over 100,000 miles.  If properly cared for, the Honda CX500 is more than capable of phenomenal mileages.
