Lambs should weigh around 40-60 lbs (carcass weight ) and will be delivered in Phillipsburg . Buy half a lamb @$4.50 lb or a whole lamb@ $ 4.00 lb. Deposit will cover the procesing .
Dorper Carcass Studies
Dorpers are non-wool sheep and were developed and selected in South Africa to produce a top carcass of lean meat without the "lanolin " taste of other known wool breeds . Tenderness of chops were measured at he University of Idaho using the Warner -Brazler shear force test. Results were very favorable for dorper meat with a 30% improvement in tenderness over other breeds
