Beef is from a farm raised 2 yr old steer. He was always pastured on all natural Kansas prairie. Always in a low stress handling environment. No growth hormones or antibiotics.

Hind quarter approximately 130lbs including, T-bones, club steak 18 lbs, Sirloin steaks, roasts 16 lbs, Round steaks or roasts 29 lbs, Rump roasts (boneless) 8 lbs, Flank steak 2 lbs, Ground beef 16 lbs, plus trimmings
